Recipe: Crispy Mushroom Bao


For the Bao: Two cups all-purpose flour, one tbsp instant dry yeast, four tbsp sugar, half tsp baking powder, 1/2 baking powder, ¼ tsp salt, ¾ cup water [you can use about 4-5 tbsp more], two tbsp oil for brushing the bowl.

For the Mushrooms: 1 packet button mushrooms, ¼ cup cornflour, ¼ cup all-purpose flour, ½ tsp baking powder, water, oil for frying.

Mix everything together and fry the mushrooms in hot oil.

For assembly: Siracha/Chilly sauce, mayonnaise, cucumber; thinly sliced, spring onion; chopped, sesame

Step 1: Knead all the bao ingredients till the dough comes together. Knead for about 8-10 mins to make the dough soft. Now, oil a bowl, and oil the dough.

Step 2: then, cover the dough with a wet cloth and let it rest for 90-120 mins. Once rested, roll it out about the thickness of stuffed paratha. Now, cut them into 3inch rounds. Then, brush the circles with oil.

Step 3: Now, close them in half and roll them very gently. Then, place on butter paper and let it rest for 30 more minutes. Next, get your steamer ready and steam the Bao for about 8-10mins. If you do them any longer then the Bao will dry. Once your bao is ready, add the stuffing and garnish it.

Step 4: Now, heat the oil in a pan. Sauté garlic till almost brown. Now, add in the mushrooms. Then, add schezwan sauce and light soy sauce. Now, mix it well while cooking for 2mins and assemble.

Step 5: Once you’re done with the assembly of mushrooms and bao, garnish it with salad. Enjoy your crispy mushroom bao!

Substitutes – For the bao:

  • Water-Milk
  • Vegetable oil- Avocado oil/olive oil
  • Garlic- Celery
  • Mushroom- Paneer
